Who doesn't love a good stack of pancakes? I know I definitely do!
Recently, I got into the high protein diet, where 60% to 70% of my diet consists of protein in any shape or form. So of course, I have to incorporate protein into one of my favourite breakfasts of all time, the pancake. Definitely not the first to have such a recipe and definitely not the last.
So here's what you'll need: 1- 2 eggs depending on your taste, 1 cup of flour, 1 scoop of whey protein ( I used Syntha-6 Strawberry milkshake flavour), 1 teaspoon of baking powder and 3/4 cup of milk (adding according to the thickness you prefer).
Process:
1) Mix all the dry ingredients (flour, whey, baking powder) in a medium to a large mixing bowl.
2) Add the egg(s) to the mixture and stir
3) Add the milk slowly into the mixture, stirring as you add it. Ensure that the mixture isn't chunky as that will reduce the texture of the pancake.
4) On a heated pan of your choosing, add 1 teaspoon of oil.
5) Let the oil heat up for a while, then scoop your pancake mixture into the pan.
6) When the pancake mixture has some bubbles, use a spatula to flip the pancake.
7) Let the pancake fry on the 2nd side for 1-2 more mins before plating it.
8) Without using more oil, fry the rest of the pancakes.
9) As an added option, sprinkle some fruits and drizzle some syrup on the pancake stack.
Aaannd that's it! A simple and protein intensive meal.
